Living Koko Smoothie

Creating morning smoothies with Head and Heart drinking cacao.

 Try our avo koko smoothie
1 banana
2 dates
1/2 avocado
1 taplespoon of head and heart (option: remelt the head and heart with 2 Tablespoons of hot water for extra chocolatey flavour)
1/2 cup almond milk
Handful of ice

 Packed with all the goodness to get you ready for the day.

 

Double Choc Brownie

Just add 2-3 cups of chopped nuts, seeds and oats to our brownie batter and stir well.
Spread into a slice tin and bake for 25 mins at 180C
Allow to cool then slice into bars.

Peanut Butter Biscoff Bars

Ingredients:

Be warned these bars are addictive and should be eaten in moderation only!
They are not exactly healthy but they are completely delicious.
I actually don’t know what I can say about this recipe that does it justice, but trust me these are good, really good
So get your sweet tooth’s ready….its going to be a sugar fuelled ride!

Ingredients:
1/2 cup @nuttelexspread

1/2 cup coconut oil

1 cup smooth peanut butter
2 cups icing sugar
1 packet original biscoff biscuits
1 bar @living_koko dark chocolate
1 Tbsp coconut oil
Optional 1 Tbsp @lotusbiscoffau Spread

Steps

Melt the butter and coconut oil together in a pan.

Beat the peanut butter with a whisk or stand mixer for a minute or so then add the melted butter/oil and mix untill well combined and smooth.

Sift in the icing sugar and mix again.

Smash the biscoff biscuits with a rolling pin until you have rough crumbs with some larger pieces then stir into the peanut mixture

Spread into a lined 20x20cm tin and then chill until set.

Once chilled ,melt some good quality dark chocolate like @living_koko with some coconut oil (and biscoff if using)and then pour ontop of the base.

Pop it back into the fridge to set then slice into bars.

 

Crispy Nutty Chewy Squares

Ingredients:

2.5 cups puffed rice

1 cup trail mix roughly chopped @wearegardenofvegan

 3/4 cup Peanut butter
1/2 cup Vegan butter
2/3 cup Golden syrup
3/4 cup Brown sugar

Ganache:
1 cup vegan chocolate roughly chopped @living_koko

1/2-1 cup soy milk

 To decorate:
Extra nuts/seeds
Flaked sea salt

Steps

mix together the puffed rice and the trail

mix in a large bowl

Add all the remaining ingredients into a saucepan and heat through until melted and combined

Stir into the puffed rice mix until well coated.
Press into a 20cm lined square tin and then refrigerate until set

For the ganache melt the chocolate and then mix in the soy milk, adding more as needed until desired consistency is achieved
Spread over the crispy base and then sprinkle a few extra nuts and seeds on top and a little flakes sea salt
Chill until firm and then cut into slices and enjoy!

 

5 Minute Double Choc Mug Cake

Ingredients:
Sometimes we all just have those huge dessert cravings, you want something really chocolatey and delicious but with minimal effort (and no cleaning up!)

 Well step this way friend, I got you covered 
 This warm squishy chocolate mug cake can be on your spoon ready for eating in less than 5 minutes flat.

 I recommend topping with some @creativegourmetofficial raspberries straight from the freezer and some delicious @oatly icecream or cream (not sponsored!)

2 Tbsp Plain flour
2 Tbsp cocoa powder
1 -2 Tsp chopped vegan dark choc my fave is @living_koko

1 Tbsp brown sugar
1 Tbsp raw sugar
1/4 Tsp baking powder
Pinch salt
1 Tbsp canola oil
3 Tbsp soy milk

Steps 

Mix all the dry ingredients together in your mug with a fork
Add the oil and milk and stir to combine
Microwave for 2 minutes then enjoy

3 Ingredient Cookie Crumb

Ingredients:
This may be the easiest and most delicious dessert around! Warm stewed berries topped with an incredible choc chip cookie dough crumble

Made with only 3 things: Ingredients

1. frozen mixed berries
2. cookie mix @humblejumblefoods
3. margarine I like @nuttelex

Steps

create the cookie dough by combining the cookie mix with the margarine and a little water

tip frozen berries into a baking dish then top with the cookie dough

bake at 180 for around 25 mins until golden and bubbling!

I like to top mine with some vegan icecream or cream- Yum

Choco Fruit Buns

Ingredients:
1 & 1/2 cup plain flower
1 cup Living KoKo Cacao Husk
4 gsm active dry yeast mixed with 1/2 cup warm milk, & 1 TSP sugar, Leave to proof.
1 TSP cornstarch
1 overripe banana, mashed
50gsm unsalted butter
1 TSP cocoa powder
1 egg at room temperature
A handful of choc chips & raisins
A pinch of salt

Jerri’s Tip: I’ve used the cocao husks like a lsa mix.It adds the same kinda nuttiness but with choc!

For vegan fruit buns substitute egg with Flaxseed Meal, Aquafaba or Chai Seeds.

 

 

Steps

Let the active dry yeast proof as mentioned.
Mix all the ingredients together ( except for the choc chips & raisins ).
Kneed till it forms a soft dough.
Add the choc chips & raisins.
Brush a bowl with oil and leave the dough to rise for an hour.
Once the dough has risen, cut into small pieces.
Shape into buns, Leave to rise for half an hour.
Brush the tops with butter and bake at 180C for 12 – 15 mins or till the tops turn brown.
Serve warm with cream cheese or a dollop of butter.
